Cornmeal Pancakes

I found this idea on TV program. The cornmeal gives the pancake lovely yellow color and a different texture. I waited so long to try it, and it did not disappoint me.


Ingredients:
3/4 cup all-purpose flour
3/4 cup cornmeal
1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1/4 cups milk
1 egg
3 tablespoons butter, melted

Directions:
In a large bowl, beat all the ingredient together.
Use the medium high heat. When bubble forms on top of the pancake, flip over. It take about 1 minute for each side.

Spicy Fish Pot with Mushroom

Are you a fish lover? I am. I try all different styles to cook fish.

Spicy Fish Pot with Mushroom

Ingredients:
Fish, any fish will work. Mushroom, ginger, garlic, green onion, dry chili, cooking wine (optional), starch, cilantro, vinegar, sugar 1 tablespoon, salt.

Fresh Fish

Directions:

1. Add starch and salt to fish, mix well
2. Fry fish with little bit oil, once fish is turning while, take it out
3. Add sugar into cold oil. When sugar is turning brown and start bubbling, add ginger, garlic, green onion, and red chili. Cook for one minute.
4. Add fish and mushroom, and cooking wine.
5. Add half cup of hot water, vinegar, and salt to taste.
6. Lower the flame and cook for about 10 minutes. When most of the water has evaporated, it is time to serve.

Blueberry Muffin with a Lighter Taste

It's been a while that I have not updated my blog, since I was busy updating my life.
These blueberry muffins were baked last summer. It is lighter than the regular greasy muffins, and creamer than cakes. It goes well with jam or butter since it is not very sweet.

Ingredients:
Butter 3 oz
Sugar 3 oz
Baking powder 2 teaspoon
Egg 1 beaten
Plain flour 8 oz
Milk 110 ml
Blueberry 3-5 oz

Directions:
1. Cream butter
2. Add sugar and egg
3. Mix 1 tablespoon of flour with blueberries
4. Sift flour with baking powder
5. Fold flour into better mixture
6. Stir milk into mixture
7. Mix blueberries with flour mixture
8. 350F, 30 minutes

Ingredients:
Pizza dough: bread flour, yeast, salt, butter
Shrimp Onion Pizza: mozzarella cheese, cheddar cheese, pizza sauce, spinach, onions, fresh chili.
Spinach Chili Pizza: mozzarella cheese, cheddar cheese, pizza sauce, shrimps, mushroom, and onions.

Tips:
1. Drizzle some oil on the baking pan , and sprinkle a pinch of salt before putting on the pizza dough. A little bit Oil makes the dough crispier, and a pinch of salt stimulates the taste buds before you even bite the pizza.
2. Bake the dough for 15-20 minutes, before putting on any toppings.

Lovely Orange Pancakes

I never thought about the name why it is called pancake, until I put all the ingredients together. The ingredients are pretty much the same to bake a cake. The difference is that pancakes are cooking with a pan. That is all. Recently I watched a food show on TV, the host was actually beating the eggs separately for the pancake....I won't do that for my pancake, but that is also the same method to make cakes.

Ingredients:
Cake flour, baking powder, salt, milk, eggs, sugar, orange zest.
Sorry I did not use the measure cups, I just eyeballed it .

Here are some tips:
For thin pancakes, add more milk
For thick pancakes, add less milk
For smooth pancakes, add less baking powder
For fluffy pancakes, add a little bit more baking powder.

The thick, and fluffy pancakes are my family favorite.

Directions:
Use medium high heat. Less than 1 minute each side. Serve with orange or some berries and syrup.

Chocolate Green Tea Cheese Cake

I will go on a trip for two months, so now it is clean-up time. I found two small boxes of Philadelphia cream cheese in the freezer , which were bought for making cheese cakes. After I decided the main ingredients, then I started to search for all other necessary ingredients to go with the cheese. At end I realized that other ingredients were such a long list. Anyway, all these were used to make a successful cake. I like how the cheese cake turned out.

What are the other ingredients?

Chocolate cake base:
Cake flour 70g,
Cocoa powder 10g,
Some instant coffee was added to enhance the flavor
Icing Sugar, 2tbs for flour mix, 1tbs for egg white
Eggs 2
Baking powder 3/8 tbs
Salt 1/4 ts
Vegetable oil 1/6 cup
Water 1/4 cup
Rum 1/4 ts, it is said that rum can remove the unfavorable taste from the egg.
Cream of tartar 1/4 ts
Vanilla extra 1/4 ts

Cheese cake layer:
Cream cheese 1 .5 cup
Plain yogurt 1 cup
Gelatin 1 small package
Sugar 1/2 Cup
Lemon juice 1/2 ts
Green tea powder 2 tbs
Water 1/2 cup

The Top layer
Red grapefruit 1
Jello powder, half package
Water as required on the Jello instruction


How I make it?

Cake, it is a chiffon style cake.
1. A: Mix all ingredients except egg while, cream of tartar, and 1 tbs icing sugar. Well blended.
2. B: Beat the egg white till the peak forms. Add sugar, cream of tartar after beating for 1 minute.
3. Mix A and B, using one third method.
3. 300F, 45 minutes. Low temperature to prevent the crack.

Cheese cake layer:
1. Add everything in a bowl except the gelatin and water. Beat till smooth.
2. Follow the gelatin instructions, and mix gelatin water with the cheese mix.
3. Pour the mix on top of cooled chocolate cake with the parchment paper on the side of the spring form to prevent the stickiness.
4. Chill in the fridge for 2 hours.

Top layer:
1. Cut the grapefruit, and line up the small wedges nicely on the top of the cheese cake.
2. Pure on the Jello mix. Make sure the Jello water is not hot, otherwise it will melt the cheese layer.
3. Chill in the fridge again for 1-2 hours.

After the cake was done, there was grapefruit left with the Jello, so a genius idea came up: ........... Grapefruit Jello.....Here you have it.
Mix grapefruit flesh, Jello water, and sugar. Let it set in the fridge for 3 hours.
Serve with mint, syrup, or anything you like.

Pan Fried Chicken Breast

This is a easy quick meal. Everything can be done within 20 minutes. Use one pan to fry the potato chips, one pot to boil green beans, and the last pan to fry the chicken breast.


Ingredients:
Potato, green beans, chicken breast, soy sauce, garlic, black pepper, and onions.

Directions:
1. Marinate chicken breast with soy sauce, minced garlic, onions, and black pepper, and salt.
2. Heat up butter, and olive oil in the pan, and drop the chicken breast. 3-5 minutes on each side. And it is done. Don't over cook it, otherwise the meat will be dry and not juicy.
