Green Tea Red Bean Cookies

These are very interesting cookies which have the Asian touch by using the green tea and red bean ingredients. The green and red color combination also coincides with the holiday colors.

I made those cookies twice. The finished product pictures are from the second time making. The first time wasn't very successful due to many reasons. The No.1 reason for failure was the dough consistency was not right. It was too sticky to cut into cookie shape. Another reason was that I over boiled the red bean, so when beans were mixed into the dough, they were crashed into small pieces. It looks much prettier when red beans hold their natural round shape. Any cookie dough will work for this recipe.

Oh, how interesting! I think I'll give this a try! I have some left over matcha from a previous project & I've been wondering what I should do with it :D
