Making Chocolate Chip Cookies with My Daughter

 This is her school project. We did together and had lots of fun. Her older and younger brothers were helping us, while her little sister was making a mess behind the scene :-)

We missed a detail in the video, that is important to make cookies look nicer. Made sure you drop 2 or 3 chocolate chips on top of the cookies before sending the tray into the oven.


Ingredient:
30 cookies

3/4 cup melted unsalted butter
1.5 cups white sugar
2 tablespoons molasses
1 egg and 1 egg yolk
2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda

Directions:
Preheat oven to 350 degrees F (175 degrees C).
Mix together the butter, white sugar.
Add eggs and molasses at the same time, mix.
Add all dry ingredients together, mix again.
Add all the chocolate chip.
Shape the cookie as a small ball, then press downward a little bit.
Before baking drop 2-3 chocolate chips on top of the cookies to make them look nicer.
350F,12-15 minutes, in the oven.
Cool the cookies in the baking tray for few minutes before moving them to the cooling rack.

Multi-Cooker Recipe--Homemade Greek Yogurt with Golden Kiwi and Honey

 Ingredients:
2 table spoon plain Greek yogurt,
1 bag of whole milk (1.3 L)
save 1/3 cup of milk to mix to the yogurt.

Simple Chocolate Chip Cookie Recipe


Ingredients:
2 cups all purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda

1 cup packed brown sugar
1/2 cup white sugar
3/4 cup melted butter
1-2 eggs
1/4 teaspoon vanilla extract
1 cup chopped dark chocolate 

325F  13min





CheeseCake

Ingredients:

 Top cheese part:

2 packages of cream cheese (250g each)
2 large eggs
(both room temperature)
2 tablespoon sugar
2 tablespoon all purpose flour 

Steps:
1 Cream the cheese using a stand mixer
2 Add sugar, continue mixing
3 Add egg one at a time, mixing on slow speed till well incorporated
4 Sift in the flour, mix it well till the batter is smooth and shinning

Base:
6 inch pan
1/2 cup crumbled cracker
1/4 cup of melted butter
1/4 teaspoon salt

Mix 3 ingredients and press it in a well buttered cake pan line with a parchment paper at bottom, no pre-baking needed for the base


Baking Temperatures and Time:
325F  for 25 Minutes
200F for a hour
Turn off the oven for 30 minutes
Open the over for 30-60 minutes
Take out the cake to cool
Leave it in the fridge overnight before serving.










Swiss Roll--Does it Taste Better when Eating from Outside Layers

Swiss RollThey say when you are taking a food picture, you have to be fast. It is simply because the picture looks more attempting when the food is just cooked. Well, for me it is a different story. If I don't shoot fast, I will have nothing to shoot about.

Ingredients:

Egg 200 g
Egg yolk 40 g
Sugar 80 g
Honey 30 g
Flour 80 g
Milk 30 g
Oil 20g
Heavy cream 200 ml


Steps:

1. Prepare baking pan, weigh all the ingredients.
2. On a double boiler whisk heat egg, egg yolk, sugar, honey to 39 c. Test temperature by your finger. Preheat the oven 375 F.
3. Remove from the boiler and continue to beat the egg till it become creamy and not bubbles. It takes 10 minutes or more.
4. Add flour, mix well.
5. Heat milk and oil by a microwave oven and mix it into the egg batter.
6. Pour into the baking pan and spread out.
7. Bake for 7-8 minutes.
8. When cooked, let it cool completely.
9. Spread whipped cream on the top side of the cake and roll it up. Leave it in the fridge for few hours before cut it. I over bake the cake, and the bottom side is darker than the top, so I just put the cream on the bottom to make it moist. As you can see from the pictures.

Few words,

1. Beating the egg, this step is crucial. The cake has not leavening agent. It is the bubbles in the egg that build up the structure of the cake.
2. Do not over bake the cake. When it is dry, it is impossible to roll it up. Remove from the pan immediately when it is cooked.

Almond Cookies--Love to Bake, Lazy to Post

Somebody unknown sent me this recipe in the email with the how to video. It looked pretty good on the video, and I would not wait to bake it, although I did not have all the ingredients ready. The cookies turned out surprisingly tasty. I told myself I have to post it, otherwise I would lose the recipe. Here you go, enjoy.

Ingredients:
Unsalted butter 150 g
Icing sugar 60 g
Egg yolk 30 g
Salt pinch
Vanilla sugar 1/2 teaspoon
Orange zests 2 teaspoon
Cake flour 190 g
Ground almond 72 g
Milk chocolate

Steps:
1 Whip room temperature butter till light and fluffy. Take a long time, be patient. It is crucial step, it forms the cookie texture.
2 Add icing sugar, vanilla sugar, salt. Mix.
3 Add egg yolk, orange zest. Mix
4Add sifted flour, almond power. Mix into a firm dough.

375 F, 10 min.

Brownies with Pecans and Macadamia Nuts

Brownies with Pecans and Macadamia NutsI asked hubby to pick up a sweet, I said I would make for him. Then he picked up this brownies from hundreds of other sweet options. He said let's start from the easiest. He is right, it is easy.

He waited and waited, after two weeks there was still no where his brownies. Then one day finally the brownies were made. He was only allow to eat one piece, since the rest had to go into the box and the box had to go a house warming party.


Brownies with Pecans and Macadamia NutsIngredients:
5 tablespoon unsalted butter
4 oz bittersweet chocolate chips
2 oz semi-sweet chocolate chips
1/2 cup sugar
1/2 teaspoon salt
1/2 tablespoon vanilla extract
1 tablespoon instant coffee powder
2 large eggs
1/3 cup all purpose flour
2/3 cup chopped pecans
1/3 cup macadamia nuts

Steps:

Preheat oven 325 F. Line the foil on a 8x8 inch baking pan, and butter the foil.
1-2. Melt chocolate and butter on a double boiler. Don't over heat the butter, otherwise the oil will separate.
3. Whisk in the sugar, salt and vanilla extract.
4. Whisk in the eggs one at a time.

5. Whisk in the instant coffee powder.
6. Whisk in the flour.
7. Fold in the nuts.
8. Pour into the baking pan.

Bake it for 35-40 minutes, until a sharp knife come out clean, after insert into the center of the batter.
Let it cool completely and cut into squares.

It was all my hubby's brownies before I saw this box. It is perfect for the brownies. I purchased it from the dollar shop for $1.5, and spent another $1 for the half golden gift wrap paper to go with the box.
