German Pancake

 Ingredients for 4 small or 2 large portions:
3 large room temperature eggs
2/3 cup room temperature milk
packed 1/2 cup flour (really pack the measuring cup firmly with flour)
1/4 tsp salt
1 tbsp clarified butter
- Bake at 425 F. 20-25 min
Garnish with powdered sugar.


Cornmeal Pancakes

I found this idea on TV program. The cornmeal gives the pancake lovely yellow color and a different texture. I waited so long to try it, and it did not disappoint me.



Ingredients:
3/4 cup all-purpose flour
3/4 cup cornmeal
1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1-1/4 cups milk
1 egg
3 tablespoons butter, melted

Directions:
In a large bowl, beat all the ingredient together.
Use the medium high heat. When bubble forms on top of the pancake, flip over. It take about 1 minute for each side.

Blueberry Muffin with a Lighter Taste

It's been a while that I have not updated my blog, since I was busy updating my life.
These blueberry muffins were baked last summer. It is lighter than the regular greasy muffins, and creamer than cakes. It goes well with jam or butter since it is not very sweet.

Ingredients:
Butter 3 oz
Sugar 3 oz
Baking powder 2 teaspoon
Egg 1 beaten
Plain flour 8 oz
Milk 110 ml
Blueberry 3-5 oz

Directions:
1. Cream butter
2. Add sugar and egg
3. Mix 1 tablespoon of flour with blueberries
4. Sift flour with baking powder
5. Fold flour into better mixture
6. Stir milk into mixture
7. Mix blueberries with flour mixture
8. 350F, 30 minutes

Lovely Orange Pancakes

I never thought about the name why it is called pancake, until I put all the ingredients together. The ingredients are pretty much the same to bake a cake. The difference is that pancakes are cooking with a pan. That is all. Recently I watched a food show on TV, the host was actually beating the eggs separately for the pancake....I won't do that for my pancake, but that is also the same method to make cakes.

Ingredients:
Cake flour, baking powder, salt, milk, eggs, sugar, orange zest.
Sorry I did not use the measure cups, I just eyeballed it .

Here are some tips:
For thin pancakes, add more milk
For thick pancakes, add less milk
For smooth pancakes, add less baking powder
For fluffy pancakes, add a little bit more baking powder.

The thick, and fluffy pancakes are my family favorite.

Directions:
Use medium high heat. Less than 1 minute each side. Serve with orange or some berries and syrup.

In my family, scramble eggs is the most regular breakfast, almost every weekday, we have this. It tastes good and takes less than 5 minutes to make.

Ingredients:
2 eggs, 2 pieces of green or red fresh chili, 1 green onion, and some cilantro. This prefect scramble egg combination!

Directions:
1. chop chili, green onion and cilantro
2. mix with eggs, and beat eggs. Add salt and pepper
3. then scramble the egg mix

Tip:
In my family we like slightly overdone scramble eggs, so we do not add water or milk. You may add some liquid to moisturize the egg texture.

Fried Egg Hash Brown

Breakfast shouldn't be boring, and it shouldn't take too long to make it. This fried egg hash brown is so easy to make. Just try it for your family and everybody will love it, guaranteed.

Ingredients:
Half potato, 2 large eggs, green or red chili, shredded onions, and some cilantro.

Direction:
1. Cut potato, you can use a shredder, or a knife is just fine.
2. Boil shredded potato until it starts to become soft. Don't over cook potato.
3. Beat eggs, and then add boiled potato, chili, onions, and cilantro, gently stir them.
4. Heat olive oil in a pan, then drop a handful of egg mix into the pan. Don't stir it until it is crisp at bottom. Flip it, cook the top.
5. Do the same for the rest egg mix. Usually it can cook 4 to 5 egg hash browns.

Shrimp Egg Sandwich

Shrimp Egg Sandwich is a strange name and a strange sandwich. I never had this before in any restaurant. I came up with this idea because I was requested to make a shrimp sandwich.

Shrimps were all small and not big enough for sandwich. It was difficult to put them between breads without falling out, so I need a banding agent to make all shrimps stay together. Eggs were the perfect choice, plus egg taste go very well with the shrimp. Add few pieces of chicken bacon, and lettuce. The strange sandwich actually tasted great.

Simple directions:
1. heat up little bit olive oil, and stir fry shrimps until their color turns into red.
2. add beaten eggs with salt and pepper into the pan. Don't stir egg too much, make sure egg and all the shrimps stay in one piece for the sandwich.
3. Assemble and sandwich with your favorite vegetables or sauces.

A cup of tea and few pieces of tuna sandwich combination is the prefect start for every morning. whenever I run out of eggs for breakfast, I will grab a small can of tuna and add some celery with mayonnaise. A small chili will give a kick to the tuna too. It is easy to make and taste wonderful every time.
