You won't find this dish in most of Chinese restaurants here in North America. However, this is one of the most typical and traditional dishes in China, since every household cooks it very often for dinner or lunch.
Although different spicies has been used to cook it, the basic ideas of this dish remain the same: fry egg first and add the egg to tomato, then cook for a while until tomato is soft and tomato's juice has been soaked into eggs. The flavors of ingredients are perfectly balanced, and it is great to go with a bowl of plain steamed rice.
