My mother-in-law is eating the boiled peanuts for the first time in her life, and she is 65 years old. When I first put the raw peanuts in the pot, she started picking few to taste. She kept eating through the whole cooking process. She enjoys the simple and original taste of peanuts, which is way the food should be cooked and served.
Ingredients:
2 lb fresh peanuts with shell. Don't buy the dried peanuts, it will take very long time to cook through.
1 tbsp salt
3 pieces of star anise (optional)
Enough water to cover the peanuts
Directions:
1. Use a big pot, put enough water to cover the peanuts. The top layer of peanuts will float. Don't worry, it is just going to be steamed.
2. Add salt, cover the pot.
3. High heat till boiling, keep the pot covered half way. Turn to low heat keep it simmer. Cook 50-60 minutes all together. Pick one from top to test the softness.

This one of my favorite snacks. It's one of those foods you can't stop eating! Although raw peanuts taste great and are a joy to eat because of the crunch, there's a flavor I also love from boiled peanuts.
