Twenty years later, the town has changed dramatically. All the old buildings were torn down, and new, better, bigger buildings showed up. It is hard for me to recognize the old neighborhood. However, the dumpling house survived. It is still in the same place, serving its old customers.
Once a while I miss the special taste from the restaurant, but too far away to go back. I try to resemble the taste myself. After tried and failed many times, finally I figured out a way.
Steps to Prepare Fillings
Ingredients
Dumpling Filling: Ground beef, yellow leek, and some Sichuan pepper corn.
Bread flour for the wrap.
Directions for making the filling
1. Bring one cup of water and some Sichuan pepper corn to boil. Simmer it for 5 minutes to bring out the flavor. Remove pepper corn, and pour the flavored water on the ground beef.
2. Heat up oil to very hot, and pour the oil on the other half of the pepper corn. Remove the pepper corn and pour the flavored oil on the ground beef.
3. Add chopped ginger, green onion (only while part), salt.
4. Use a hand mixer to beat the beef for 5-8 minutes, or when the oil and water are well blended into beef. As shown on the lower left picture.
5. Add chopped yellow leek. blend it well.
6. Wrap the dumpling. Dumpling dough is made of bread flour and water. Knead the dough for 3-5 minutes, and let it rest for 3o minutes. Ready made dumpling wraps can also be found in Chinese grocery stores.

Soy sauce, red wine vinegar, sesame seed oil, sesame seed and hot chili oil.
Dry sea weed, green onion (now you can use the green part left), and cilantro.
Salt for flavor.
Directions for soup:
1. Add all the ingredients into a bowl, except sesame seed oil and chili oil. Since the sour is one of the main flavor, you can add a little bit more vinegar.
2. Once the dumplings and dumpling water are in the bowl, add two oils.

How to boil dumplings:
1. Bring a big pot of water to boil.
2. Add dumplings into water. Cover it. When it is boiling again, add a cup of cold water.
3. Wait till boiling add water again. All together add three cups of water.
4. When it is boiling again, remove the cover and waiting 1 or 2 minutes, then it is ready to serve.
