Cucumber Orange and Olive Salad

This recipe comes from Essentials of Mediterranean Cooking . My hubby does not read recipe book much. Just by chance this book was left on the bed last night, and he picked up the book and quickly went through it. He is particularly interested in this dish. That is why it is on our dinner table tonight.

Baby cucumbers are added into the original recipe.
Ingredients:
4 baby cucumbers, 2 oranges, 3 tbsp. olives any your favorite kind, red onion, thinly sliced, olive oil, salt and pepper.
Direction:
Peel cucumbers, oranges, and then cut them into same size. Add onion slices, olives. Drizzle with extra virgin of olive oil. Season with salt and pepper.

It actually tasted pretty good. My sister-in-law drank the juice from the plate after the salad was finished. Surely she did not have it enough. :)

You are absolutely right, that a good salad does not have to be a boring bit of lettuce, cucumber and tomato. A salad can be a combination of almost anything.
