Beef Dumplings in Hot Soup

Twenty years ago there was a dumpling house in the nearby town. I could take a bus to get there or walk the shortcut through the farmer fields for 30 minutes. I usually picked the second option. During lunch time, it was a very long line every time, but walking and waiting were all worthwhile.

Twenty years later, the town has changed dramatically. All the old buildings were torn down, and new, better, bigger buildings showed up. It is hard for me to recognize the old neighborhood. However, the dumpling house survived. It is still in the same place, serving its old customers.

Once a while I miss the special taste from the restaurant, but too far away to go back. I try to resemble the taste myself. After tried and failed many times, finally I figured out a way.
